Matcha is a flavourful Japanese green tea. I once tried matcha flavored ice-cream at a Japanese restaurant and instantly fell in love with its unique, slightly bitter taste. Since it's very difficult to find authentic matcha ice cream on the shelves of your standard grocery store, why not make it yourself? All you need is matcha powder that is not impossible to find in most big supermarkets.

500 ml whipping cream
100g icing sugar
5 egg yolks
2 tsp Match green tea powder
1 tsp vanilla extract
Heat cream and vanilla extract until almost boiling but do not boil.
Beat egg yolks with icing sugar.
Slowly add hot cream to the egg yolks while stirring continuously.
Put the cream in a microwave safe dish, cover with plastic wrap and microwave for 2 minutes until the mixture becomes thicker.
Mix matcha powder with a little bit of the hot cream mix and stir thoroughly, then add the resulting paste to the cream and yolks mixture. Pass it through a sieve to get rid of any lumbs.
Transfer the mixture to a plastic container with a firm lid and freeze for at least 4 hours. Stir/churn the ice cream thoroughly once every hour to create a smooth consistency.
